These sweet potato cookies are our favorite fall treat - the soft texture combined with the sweet pumpkin spice flavor will make you ask for more! Add frozen blueberries or pecans for extra goodness, and enjoy with a cup of tea. :)

Ingredients
  

  • 1 1/2 cup oats
  • 1 medium size sweet potato
  • 1 tbsp maple butter
  • 1/2 cup cashew butter
  • 1/2 cup soy milk
  • 1/2 tsp baking soda
  • 1 tsp lemon juice
  • 1/2 tsp pumpkin spice

Instructions
 

  • Preheat the oven to 375 F.
  • Blend oats at a high speed. (Alternatively, you can use oat flour).
  • Add the rest of the ingredients and blend till nice and smooth.
  • Shape dough into 1-inch balls and flatten with a fork.
  • I love adding frozen blueberries or pecans in the dough!
  • Bake for 15 minutes.
