Equipment

  • 1 large pot
  • 1 cutting board
  • 1 sharp knife
  • 1 grater

Ingredients
  

  • 1 tbsp olive oil
  • 1/2 medium yellow onion
  • 4 garlic cloves
  • 1 medium carrot
  • 2 medium potatoes
  • 3 cups Shiitake mushrooms (you can substitute with your favorite wild mushrooms)
  • 1/2 cup barley
  • 7 cups water
  • 1 tsp turmeric powder
  • cayenne pepper or black pepper to taste
  • salt to taste

Instructions
 

  • Saute finely chopped onion, minced garlic, and grated carrot until fragrant.
  • Add cubed potatoes, barley, and pour 7 cups of water. Bring to a boil.
  • Add the mushrooms, turmeric powder, cayenne pepper, and let simmer till barley and potatoes are cooked.

Notes

Serve with chopped parsley and warm sourdough bread.
