
These sweet potato cookies are our favorite fall treat – the soft texture combined with the sweet pumpkin spice flavor will make you ask for more! Add frozen blueberries or pecans for extra goodness, and enjoy with a cup of tea. 🙂
Ingredients
- 1 1/2 cup oats
- 1 medium size sweet potato
- 1 tbsp maple butter
- 1/2 cup cashew butter
- 1/2 cup soy milk
- 1/2 tsp baking soda
- 1 tsp lemon juice
- 1/2 tsp pumpkin spice
Instructions
- Preheat the oven to 375 F.
- Blend oats at a high speed. (Alternatively, you can use oat flour).
- Add the rest of the ingredients and blend till nice and smooth.
- Shape dough into 1-inch balls and flatten with a fork.
- I love adding frozen blueberries or pecans in the dough!
- Bake for 15 minutes.
