
We make these delicious waffles every weekend! Enjoy them with your favorite jam, nut butter, fresh berries, honey, or cashew cream.
Equipment
- a bowl
- a whisk
- a small ladle
- a waffle iron
- a blender (optional)
Ingredients
- 1 cup organic flour
- 1/2 cup spelt flour
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/2 tsp cinnamon
- 1 tbsp olive oil extra virgin
- 1 ripe mashed banana
- 1 1/4 cup almond milk
- 1 tsp pure vanilla extract
- 1 tsp lemon juice (Feel free to add lemon zest for an extra flavor)
Instructions
- Mix the dry ingredients first.
- Add the wet ingredients until thoroughly combined.
- Heat a waffle iron and spray with olive oil.
- Cook the waffles for 3-4 minutes.
Notes
Our favorite toppings are:
Cashew cream + honey or maple syrup + fresh berries.
To make cashew cream: Blend 1 cup raw cashews (soaked 3 hours or overnight in hot water) with 1/2 cup water until smooth.
