
These almond butter oatmeal cookies are super easy to make, and they are a great alternative for your morning oatmeal.
Equipment
- blender
- baking sheet
Ingredients
- 2 1/2 cups oats
- 1 large banana
- 1 cup almond butter
- 1 cup almond milk
- 1/2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp lemon juice
Instructions
- Preheat the oven to 375 F.
- Blend oats at a high speed. (Alternatively, you can use oat flour).
- Add the rest of the ingredients and blend till nice and smooth.
- Shape dough into 1-inch balls and flatten with a fork.
- Bake for 15 minutes.
- (Optional): Add berries (either frozen or fresh), raisins, walnuts.
Notes
- I make these almond butter cookies at least once a week. The kids enjoy them with a cup of warm soy milk, and we have them with a cup of tea or coffee.
- This is a very basic recipe and it’s open for imagination. Add frozen blueberries, fresh strawberry slices, favorite nuts, dry fruit, cinnamon, etc.
