Equipment
- 1 large pot
- 1 cutting board
- 1 sharp knife
- 1 grater
Ingredients
- 1 tbsp olive oil
- 1/2 medium yellow onion
- 4 garlic cloves
- 1 medium carrot
- 2 medium potatoes
- 3 cups Shiitake mushrooms (you can substitute with your favorite wild mushrooms)
- 1/2 cup barley
- 7 cups water
- 1 tsp turmeric powder
- cayenne pepper or black pepper to taste
- salt to taste
Instructions
- Saute finely chopped onion, minced garlic, and grated carrot until fragrant.
- Add cubed potatoes, barley, and pour 7 cups of water. Bring to a boil.
- Add the mushrooms, turmeric powder, cayenne pepper, and let simmer till barley and potatoes are cooked.
Notes
Serve with chopped parsley and warm sourdough bread.
