
This dish is the imitation of Thai sticky rice. It has the most perfect combination of coconut milk, maple syrup, warming vanilla, and dates. Top with fresh mango for extra goodness!
Equipment
- 1 saucepan
Ingredients
- 1 cup white rice
- 2 1/2 cups water
- 1 can coconut milk
- 1/4 cup maple or agave syrup
- 5 dates
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Combine water and rice in a saucepan. Bring to a boil and simmer for 30 minutes until all the water is absorbed.
- Add the coconut milk, maple syrup, chopped dates, vanilla extract, and cinnamon. Let simmer for another 5 minutes.
- Let sit for 10-15 minutes. Serve with a dash of cinnamon, extra maple syrup, shredded coconut, or fresh mango slices (optionally).
