This Frozen Coconut Peach Yogurt will give you a sweet taste of sunny Georgia and its juicy peaches. Indulge yourself in those creamy bites and stay cool! 🙂
Equipment
- 1 blender
- 1 ice cream / popsicle mold
Ingredients
- 1 cup coconut yogurt (always choose organic with simple ingredients and no added sugar)
- 1 peach
- 1/2 tbsp agave syrup (can use maple syrup instead)
Instructions
- Cut up the peach into chunks.
- Place all the ingredients in a blender.
- Blend slightly. You don't want the peach chunks disappear completely.
- Pour into popsicle / ice cream molds.
- Freeze for at least 6 hours or overnight.
Notes
- Jaxon and I love adding dark chocolate chips – you can either add them to the mix before or after blending.
- Cocojune is my most favorite coconut yogurt. It has simple ingredients, a creamy texture and an amazing flavor. You can easily find it at any grocery store now.
- If you don’t have a popsicle / ice cream mold, here’s the link to the one I personally like. It is FREE of latex, lead, PVC (Polyvinyl Chloride, Nitrosamine, BPA (Bisphenol-A), Phthalate, PFOA (Perfluorooctanoic Acid), and has really cute designs!!!
- If you prefer to use an ice cream container, check out this vacuum insulated stainless steel thermos container which is especially great for road trips in the summer!
- Don’t have a nice blender?! I got you! The absolute best blender is Vitamix E310 Explorian – this is the one I have, but if you’d like a bigger one, go for Vitamix Ascent!
