
So simple and so good. Enjoy the natural flavors and light texture of this yummy split pea soup.
Equipment
- 1 large pot
- 1 sharp knife
Ingredients
- 1-2 tbsp olive oil extra virgin
- 1 medium carrot
- 1 stalk of celery
- 1/2 medium yellow onion
- 2 cloves of garlic
- 2 medium potatoes
- 2 1/2 cups split peas (previously soaked for 2-3 hours)
- 6 cups water
- salt and black pepper to taste
Instructions
- Sauté the chopped carrot, celery, onion and garlic till soft and fragrant.
- Add the water, split peas, and bring to a boil.
- Toss the diced potatoes, and lower the heat to bring the soup down to a simmer.
- Cook till the split peas and potatoes are soft.
- Add salt and black pepper to taste.
Notes
- You can either puree the soup or enjoy it as it is. Both are great – it really depends on which texture you prefer.
- Enjoy it with warm and toasted sourdough bread. 🙂
